I'm looking to open-minded a quick take out restuarant and the only cooking equipment I would need is a undersized conveyor oven. Do I need an overhead hood for it? Does it depend on the gauge? At what point does a toaster become an oven in need of

We have a bagel look for and my dad thinks that we'll save money by turning off the oven/toaster when there are no customers and turning it back on when they break apart in. But I think its better to leave it on, cause perhaps it works like any other
